  4. Sprinkle flour on the counter to roll out the pastry into 1/4 in thick. Place the pie bowl on top to trace the shape. Pat some flour onto hands to prevent sticking. Take the remaining pastry and make a ball. Set aside for the top of the pie.
  5. Pour the apple mixture on top of bottom crust. Roll out the left over crust and make a design or just pop a few holes with fork.
  6. Bake in oven at 425 F for 13 minutes.
  7. Lower the temperature to 325 F for 35 minutes. After 20 minutes, crack the egg and whisk with a fork. Gently spread a little over the top. If you have a paint brush use that. Don't use the entire egg just enough to cover the pastry.
  8. Allow the pie to set for 5 to 10 minutes
