- Tart Shell Pastry
- 115 g / ½Cup Butter
- 50 g / ¼Cup Granulated Sugar
- 1 Egg Yolk
- 185 g / 1¼Cups Flour
- 30 g / ¼Cup Cocoa Powder
- 2 g / ¼Tsp Salt
- 15 ml / 1Tbsp Water
- Ganache
- 300 g / 1¼ Cups Whipping Cream
- 300 g / 10oz Dark Chocolate (70% Cocoa)
- 30 g / ⅛ Cup Butter
- Strawberries & Pistachio:
- 250 g Strawberries (to taste)
- 10 g Chopped Pistachio (to taste)
Steps to make Chocolate Ganache Tart

- Tart shell
- Add the egg yolk and the water and mix until you form a homogeneous dough. Let it cool overnight (at least 8h))
- Open and place it in the tart pan. 5mm is a good thickness.
Don't be afraid to knead before opening it.
After many hours in the refrigerator, the dough is too fragile. - Let it cool again in the fridge and bake it at 175°C for 20min
- Ganache
Chop 300g dark chocolate as fine as you can - Heat up 300g of whipping cream and take it out of the heat when it just started to boil
- Drop the hot whipping cream on the chopped chocolate and let it seat for 2min before mixing it.
- Add the butter, mix more and fill the tart shell.
- Arr the strawberries and the chopped pistachios to taste, let it cool for 15 min and enjoy it 😊
